Meet the Dietitian

Our Registered Dietitian, Susan Hurd, RDN, LDN, adds another dimension to our dining program by working with our campus community to encourage healthy lifestyles and to help individuals become more comfortable in their dining environment at Moravian University.  She has a passion for leading a healthy lifestyle and empowering people of all ages to reach their healthiest potential through food and nutrition.  

Sue works closely with our Office of Disability & Accommodation to ensure the health and safety of our students with medical needs. She is an AllerTrain™ certified master trainer providing ongoing food allergy education to our dining team to help ensure safe and delicious foods for our customers with food allergies and Celiac disease.

Simple Servings

FARECheck Gold


In 2021, Moravian University became the first college/university in the nation to receive FARECheck Gold Certification.  FARECheck is an enhanced training and review program in food handling and safety practices to help keep food-allergic individuals safe and included when dining out.  A Gold certification means that Moravian University's Simple Servings station meets the highest standards of safety, including policy and training to prevent cross contact.

Simple Servings is our allergen-safe dining option for our customers with food allergies or gluten intolerance. This station offers food free from peanuts, tree nuts, shellfish, wheat, soy, milk products, sesame, eggs, and gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens. Simple Servings is a served station, open to everyone and featuring wholesome foods that appeal to a broad range of tastes. Lunch and dinner menus change daily and include varied protein options, such as fish, beef, pork, chicken and turkey, as well as gluten-free whole grains and steamed and roasted vegetables.

Separate equipment, storage areas, utensils and preparation areas minimize, but do not totally eliminate, the chances of gluten and allergens in our Simple Servings foods. 75% of Simple Servings items also meet our Mindful criteria, which makes it an easy and healthy choice for customers who are focused on ingredients and portion size to control weight, blood sugar and other health issues.

Simple Zone

Simple Zone is a “pantry” where food items and dedicated appliances needed by customers with celiac disease or other food allergies can be housed with precautions against cross-contamination. Students maintain control over managing their own allergy when foods are pre-packaged because they are the only ones handling them. Students can work closely with managers and chefs to negotiate which products are stocked, and can even prepare them in our gluten-free toaster and microwave.  Toast a piece of bread or gluten-free waffle in our dedicated gluten-free toaster oven. Grab a prepared sandwich made to-go on gluten-free bread. We also stock baked goods, desserts, and more in our Simple Zone refrigerator. To maintain a safe, allergy-free area, we ask that students do not bring food from other stations into Simple Zone and use only the utensils, appliances and plates provided in this area.

Food Allergies

We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs.

The Star Student Restaurant does not serve or include peanuts or tree nuts in recipes prepared in the facility with the exception of coconut or coconut oil in some dishes, desserts and dessert toppings.  We take preventive measures to keep peanuts and tree nuts from entering the facility. While procedures are taken in the Star Student Restaurant, we cannot guarantee products from vendors and suppliers do not pose a risk for cross contact in manufacturing nor can we totally eliminate the risk of cross-contact in our facility.   

We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. For students with medical conditions that impact their ability to dine well on campus, we strongly encourage a conversation with our Registered Dietitian, Executive Chef, and/or our General Manager. Occasionally, Dining Services cannot meet a student’s medical needs within normal service.  We may require additional medical documentation to enable us to develop a more specific meal plan accommodation. In this situation, we ask that the student contact the Moravian University Office of Disability & Accommodation (ODA).  Together, our departments work to serve our students with medical needs related to dining on campus. Menu allergens 

Our menu system provides ingredient statements specifically highlighting the top nine allergens: milk, eggs, shellfish, fish, tree nuts, peanuts, sesame, wheat, & soy. Guests may check on the presence of allergens prior to planning their meals using the online menu, the Everyday App,  and nutrition calculator. The absence of an allergen listed on posted or electronic product signage is not a guarantee that the product is free of that allergen. The guest is responsible for communicating their allergy to a supervisor or manager to ensure safety. 

Plant Based Dining on Campus

No matter the reason, if you're opting to eat more plant-based meals, we have you covered with delicious, innovative dishes made from whole foods! Each of our dining locations has options suitable for those that prefer plant-based ingredients.  You can also follow our plant-based Instagram @moravianvegout for features on some of our daily menu options to help inform your choices.

The Star
Our main dining space on campus, in the Haupert Union Building, The Star features the amazing plant-focused station Sustainable Table.  Sustainable Table's recipes are predominantly plant-based with the occasional fish dish. Typically, the entrees are vegan or can be made vegan by omitting certain items (like sour cream or cheese).  Our Chefs take inspiration from food trends and international cuisine to create delicious meals for lunch and dinner weekdays.  

  • Hometown station has a Vegetarian or Vegan entree every lunch & dinner.
  • Most sides at Simple Servings are Vegan. Find beans, grains and legumes here.
  • Amos' Salad Hut has DIY salads, cut fruit, beans, tofu and yogurt.
  • Grill has tofu scramble and Veggie burgers available on a daily basis.
  • Dairy-free milk available at beverage station.

Sick Meal Policy

We're sorry that you're not feeling well! If you are ill, we encourage you to stay at home and rest rather than coming into our dining facilities, in order to help prevent the spread of viral illnesses.  If you're not feeling well, please place an order for your desired meal via Grubhub and have a friend pick up for you.  You can connect a student account to your Grubhub account and pay for your meal using your Dining Dollars or Hound Bucks.

Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
