Meet the Dietitian

Sue Hurd 413x352Susan Hurd, RD, LD is a graduate of Rutgers University. She has 20+ years of experience as a Registered Dietitian with Dining Services on college campuses. Throughout the month, Susan presents fun and informative topics related to healthy eating & living to the Moravian College campus community. Available for complimentary consultations on topics such as: food allergies, Celiac disease, diabetes, or other special dietary needs, eating healthy on campus, vegan and vegetarian nutrition, weight management, or for campus presentations, Sue has a passion for leading a healthy lifestyle and empowering people of all ages to reach their healthiest potential through food and nutrition. She works with students, faculty and staff to encourage a healthy and holistic lifestyle. Sue also assists students on campus that have dietary restrictions, helping them become more comfortable in their new dining environment. Contact or use the feedback form to request a consultation. Simple Servings

Simple Servings Best Concept AwardSimple Servings is our allergen-safe dining option for our customers with food allergies or gluten intolerance. This station offers food free from peanuts, tree nuts, shellfish, wheat, soy, milk products, eggs, and gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens.

Separate equipment, storage areas, utensils and preparation areas minimize, but do not totally eliminate, the chances of gluten and allergens in our Simple Servings foods. 75% of Simple Servings items also meet our Mindful criteria, which makes it an easy and healthy choice for customers who are focused on ingredients and portion size to control weight, blood sugar and other health issues.

My Zone

My Zone is a “pantry” where food items and dedicated appliances needed by customers with celiac disease or other food allergies can be housed with precautions against cross-contamination. Students maintain control over managing their own allergy when foods are pre-packaged because they are the only ones handling them. Students can work closely with managers and chefs to negotiate which products are stocked, and can even prepare them in our gluten-free toaster and microwave.  New! Make a hot, fresh gluten-free waffle in our dedicated waffle iron.

Food Allergies

We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs. We have designated The Star Campus Restaurant as peanut and tree-nut free, and do not use any products with peanuts or tree nuts in the kitchen. Clewell Dining is also a nut-free kitchen. We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. For students with medical conditions that impact their ability to dine well on campus, we strongly encourage a conversation with our Executive Chef, Registered Dietitian and/or our General Manager. In many instances, our dining team can easily assist with special needs. 

Occasionally, Dining Services cannot meet a student’s medical needs within normal service.  We may require additional medical documentation to enable us to develop a more specific meal plan accommodation. In this situation, we ask that the student contact the Moravian College Academic and Accessibility Support Center.  Together, our departments work to serve our students with medical needs related to dining on campus.  To contact the Academic and Accessibility Support Center, email aasc@moravian.edu or call 610.861.1401.

Sick Meal Policy

We're sorry that you're not feeling well! If you are ill, we encourage you to stay at home and rest rather than coming into our dining facilities, in order to help prevent the spread of viral illnesses.  We are happy to provide you with a sick meal which you can charge to your dining account, and have a friend pick up for you. A basic sick meal consists of a beverage, as well as a choice of light breakfast or lunch options. You may make individual requests for different meal periods if necessary.
